The Rajasthani curries look brilliantly red that gives the impression that they are spicy. In fact, the cuisine uses pure ghee as cooking medium and is not at all spicy. A traditional sweet dish lapsi is prepared with broken wheat sautéed in ghee. The simplest and extremely tasty dish is the combination of dal, bati and churma. Dal is lentils, bati is baked wheat ball and churma is powdered sweetened cereal.

Rajasthani cuisine is not only limited to vegetarian dishes. The unique creation of the Maharaja of Salwar is the Junglee Maas (meat). This was favourite among the erstwhile Maharajas of Rajasthan due to the scantiness of spicy ingredients in it. The game brought from the hunt was cooked in pure ghee, salt and red chilies only. Nowadays this dish has been adapted to less controversial ingredients like lamb, pork or poultry, instead of games from the hunt.
